It’s doable and very ambitious
As someone currently in HCM and has moved around districts. I would say this is too much in 2 days. The heat, traffic and transport will have an impact on your schedule. Think about what you want to eat and what you want to see. Eating early in the morning or after sunset as you might not feel hungry when humid heat kicks in. Same with shopping, do it after sunset. Use Grab to move around, even short distances in the midday to 3pm heat. Factor in coffee shop stops to rehydrate. You will see more walking around D1 but early morning or after sunset when cooler. It’s an amazing experience 🤩🇻🇳
That’s a very forced itinerary, far from a holiday relaxation
Why don’t you just fly between HCMC and Phenom Penh.

We did one very similar and it was a great taster for Exploring. Hope you explore Angkor Wat on your full day. We will be heading back in May for a longer trip. I like your itinerary.
Road trips in VN are horrible .
The traffic alone in HCM is so bad it’s hard to jump from one district to the next.
If goal is Angkor wat. Stay 2 nights in Seim Reap and do all day bicycle tour thru Angkor wat, you’ll see tons of temples not accessible by bus or tuk tuk. Truly an amazing day, I used Angkor Cycling.
