My family of 4 took PB8 brand from Amazon. We just returned from 3 weeks of adventurous eating with no problems. Probiotics absolutely lower your chance of food poisioning by adding in good bacteria daily to flush any bad bacteria out. I’m prone to loose stools normally for other reasons, so I also take a psyllium fiber pill daily when traveling which help prevent that challenge when bathrooms are not always easy to find.

I think you are over worrying I went twice last year the food was great, fresh and cheap but well cooked with no ill effects and if you do they have plenty of chemists and doctors. Go and enjoy
