Hi, I’ll be soon on my first exploratory trip to Vietnam where I’ll be spending 3 days in Da Nang. 1 in Mercure bana hills, da Nang, and Hoi Ann. Hoi Ann I might stay or do a day trip but in either cases I won’t be moving my luggage and keep it in Da Nang hotel only. Except Bana Hills for the rest 2 days, should I book a full time car to guide us or I can simply travel by grab or explore on a bike? How much of a difference it would it make? sensible to book someone or visit the place and probably find out from locals?

Yes I did a daytrip to Hoi An, and 1 day trip to Ba Na, did not spend a night in Mercure as it is quite expensive for me.
Get a car and a driver who can show you the important sites and sights to see in each location, especially since you only have a day, you really don’t have time to poke around and walk and wander. HoiAn is about 45 minutes from central DaNang or more depending on traffic so too far to bike, the road is very busy and no bike lanes.
