Don’t rush Vietnam; you’ll miss out on what is most important which is getting to know these wonderful people. It’s a very large country; there’s long distances between places and you don’t have to go to every single place that the guided tours go to. To be honest, some are barely worth visiting as they’ve become over touristed, run down, tacky and completely over run with tour groups, even in the off season. It also depends on time of the year you’re going as to what would be the best itinerary. I have no idea what your age group or interests are but, we were there just 2 years ago in the off season in September. We didn’t go to Sapa or Ninh Binh or stay in Darlat but went to most of the other places. Our favourites were Hanoi; it’s impossible to get bored there. Hue, so very beautiful, so much to see and do; has a great vibe. I would only do a day tour to Halong Bay. The drive out there is amazing; lots to see and the bay is beautiful but not worth an overnight stay. I would avoid Hoi An like the plague and HCMC. You couldn’t pay me to go back to either of those places.

I like itinerary b but would add sapa, drop halong bay and try and find 3 or 4 extra days to add on to sapa and area. You definitely are trying to cover a lot of area in under 3 weeks.
