Should I upload apps like 12Go and grab while still in Canada or should I wait to have a SIM card in Vietnam? I am concerned about the security code that is sometimes sent via text , to your phone number (my cell number won’t work in Vietnam) . Thanks for your input!

Download and set up the Grab app before you arrive. That way you can use it as soon as you arrive at the airport in Vietnam (if you also have a Vietnamese sim). Use Grab for all taxis, definitely at the airports, otherwise you will be scammed by the regular taxis!
Set it up at home. Just so it is ready. It makes it easier when you get there.

Yep, do it at home. Your cell number should still work on WhatsApp. My Australian one does and I receive sms for two factor authentication.

I am from Canada and downloaded GRAB before I left home. It works amazing here! We use it constantly. I also don’t have access to my Canadian number for texts. It’s created a few issues with my banking authorization authentication steps. Get rid of that if you can before getting here. We are with Royal bank.
