We are spending 3 days in Hue next month and I keep reading that bun bo Hue in Hue is a completely different dish from the version I had in Saigon. I want to do this properly.
Where do locals actually go for it? I have seen Ba Xuan mentioned a few times, and some old place near the citadel, but I am not sure what is legit and what is a tourist trap with a good review game.
Also, is morning the only acceptable time to eat it? And what is a fair price these days, around 30 to 40k? Any tips appreciated.

Ba Xuan is the real deal, go there. It is on Mai Thuc Loan street, tiny plastic stools, and the broth is incredible, deep and lemongrassy, nothing like the Saigon version. Morning only, they sell out by 9 or 10. About 35k a bowl last time I was there. Order it the Hue way: extra chili oil on the side and a plate of greens. Avoid the places on the big tourist streets near the citadel with English menus, they are fine but not the same league.

This is exactly what I needed, thank you. Is Ba Xuan easy to find for someone who does not speak Vietnamese? And how spicy is it really, should I warn my husband who is a spice wimp?

Easy, just show the name to your Grab driver, everyone knows it. The base broth has a gentle warmth, the real heat comes from the chili oil they put on the table, so your husband can just skip it. Point at what the table next to you is eating, that trick never fails in Hue.
