Night market in Da Lat, what should I not miss?

Heading to Da Lat this weekend and everyone keeps telling me the night market is the main event. Problem is I have no idea what to actually eat there beyond the obvious.

I have heard about banh trang nuong (the grilled rice paper thing) and the hot soy milk, but what else is worth hunting down? Any specific stall or corner of the market that locals swear by?

Also is it a cash only situation or do the stalls take QR payments now? Trying to figure out how much cash to bring. Cold weather food recs especially welcome, it is going to be chilly up there.
