I am vegetarian, will I survive street food in Vietnam?

My wife and me are vegetarian since 5 years, not vegan, we eat eggs and dairy. We are going to Vietnam next month, Hanoi, Hue and Hoi An, and I am a little worried because everyone says fish sauce goes in everything.

Is the word chay enough to get understood at street stalls or only at proper restaurants? And the banh mi carts, do they usually have a tofu or egg option or is it all pate and pork? I do not want to be the annoying tourist but also do not want to go hungry.

Any vegetarian travelers here, how hard was it really?
