No, you need the visa to board the plane.
Vietnam does NOT easily issue visas on arrival ( you need an approval letter from a travel agent, etc and its far easier to just get an eVisa ) but more importantly, your airline will not let you board your flight to Vietnam if, by your nationality in your passport, they find a visa is needed and you don’t have one.
